Wolf Oven Not Holding Temperature: Sensor or Calibration?
An oven that reads 350°F and bakes like 300°F is usually one of three things. How to tell a drifted sensor from a calibration offset from a failing element, and which of them you can settle without a technician.

“The oven says 350 and it bakes like 300.” We hear that sentence most weeks, and it is a good description of a real fault rather than a vague complaint. A Wolf oven that cannot hold its set point is doing one of three things: reading the cavity incorrectly, being told to aim at the wrong number, or failing to produce the heat it is asking for. They feel identical from the kitchen and they are easy to separate with a probe.
First, prove the problem exists
Before anything is opened, establish the actual offset. Hang an independent oven thermometer in the centre of the middle rack, dial in 350°F and let the cavity call its own preheat. Then wait another fifteen minutes — the tone fires when the air reaches temperature, not when the cavity walls and racks have caught up, and reading it too early is the single most common source of false alarms.
Write down the reading at fifteen minutes, thirty minutes and forty-five minutes. What you are looking for is the pattern, not one number:
- Steady and low by 25–50°F. A consistent offset. Calibration or a drifted sensor.
- Swinging wildly, 60°F or more between readings. A control or element cycling problem, not a calibration one.
- Climbs then falls away and never recovers. Points at an element, a relay on the control board, or on dual-fuel models a failing igniter that no longer pulls enough current to open the gas valve.
- Correct on bake, wrong on convection. The convection element or its fan circuit, with the bake side healthy.
That five-minute exercise decides everything that follows.
Calibration: the setting most people never touch
Wolf ovens carry a user-accessible calibration offset, normally reachable by holding the bake or mode control until the display enters the adjustment mode — the sequence differs by series, and the owner’s manual for your model gives it exactly. The offset lets you shift the oven’s target by a fixed number of degrees, typically up to about 35°F in either direction.
If your measured error is a steady 25–35°F low, and the oven otherwise heats briskly and cycles normally, an offset is the correct fix. It is what the adjustment exists for. Ovens drift slightly with age and with how the appliance was installed, and correcting that is maintenance rather than repair.
What the offset must not be used for is masking a fault. If the error is 60°F, or it changes depending on how long the oven has been running, or the cavity takes forty minutes to preheat, calibrating simply hides a failing component for a few weeks until it fails properly. Measure first, then decide.
Testing the oven sensor
The sensor is a resistance temperature detector — a probe protruding into the cavity, usually at the upper left rear, whose electrical resistance rises predictably with temperature. The control board converts that resistance into a reading, so a sensor that has drifted out of spec makes the board confidently wrong.
At room temperature, around 70°F, a healthy RTD of the type used in these ovens measures close to 1080 to 1100 ohms. Meaningfully outside that band and the sensor is finished. It is also worth inspecting the probe itself: if it has been bent back against the cavity wall — which happens when a large roasting pan is forced in — it will read the wall rather than the air and report high, causing the oven to under-heat by exactly the amount everyone notices.
Sensor replacement is a modest part and a straightforward job. Two screws inside the cavity, a connector behind the rear panel, and a re-test. The important part is not the swap but confirming the resistance beforehand, so you are not replacing a good part and leaving the real fault in place.
Elements, relays and the dual-fuel difference
If the oven cannot reach temperature at all, rather than reaching a wrong one, the heat source is the suspect. On an electric or dual-fuel Wolf oven, a bake element that has failed open produces no heat while the convection fan runs and the display behaves perfectly — which is why people so often assume the control board has failed. A visual check often shows a blister or a break in the sheath, but not always; a continuity test settles it.
On an all-gas oven the equivalent failure is the igniter. These weaken with age rather than dying outright: the igniter still glows, but no longer draws enough current to open the safety valve, so the oven heats slowly, unevenly, or gives up part-way through a bake. A glowing igniter is not proof of a healthy one, and this is the fault most commonly misdiagnosed as “the oven needs a new board”.
Relays on the control board can also weld or fail to close. That is the least common of the three and the only one where the board genuinely is the answer.
When it is worth calling someone out
Do the thermometer test first — it costs nothing and it tells you which conversation you are having. If the answer is a steady 30°F offset on an otherwise healthy oven, adjust the calibration and get on with dinner.
Call if the oven will not reach temperature at all, if the swing is wild, if the door stays locked after a self-clean cycle, if there is a burning-electrical smell, or if a fault code appears on the display and returns after a power cycle. Those need a meter across a sensor and an element, and a look at what the board is actually commanding — not another guess and another part.

How much temperature swing is normal in a Wolf oven?
A cycling swing of roughly plus or minus 15°F around the set point is normal and by design — the element cycles to hold an average. What is not normal is a steady offset, where the average itself sits 30°F or more away from what you asked for.
Will an oven thermometer from the supermarket tell me enough?
It will tell you whether there is a problem, which is the useful part. Hang it in the centre of the middle rack, preheat fully, and give it a further fifteen minutes to settle. Do not trust the reading in the first two minutes after the preheat tone, and do not read it through the door glass.
Does a self-clean cycle damage the oven?
It does not damage a healthy oven, but it is a stress test that finds anything already marginal. Thermal fuses, door latch motors and tired bake elements very often fail during or just after a self-clean, which is why a cycle run the week before Thanksgiving is a genuinely bad idea.
